Cadbury Mini Egg Chonkies

Cadbury Mini Egg Chonkies

Ingredients:

  • 10 tablespoons salted butter
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 yolk
  • 1 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoons salt
  • 1 cup chocolate chips
  • 1 cup white chocolate chips or chunks
  • 1 Bag of crushed Cadbury Mini Eggs

Directions:

  1. In mixer, cream together butter and both brown and white sugar
  2. Add whole egg and mix well, then add yolk and mix well
  3. Add vanilla flavoring and mix
  4. In a seperate bowl combine dry ingredients (flour, baking powder and salt) and whisk together
  5. Add flour mixture to butter mixture and mix until just combined
  6. Remove bowl from mixer and add chocolate chips, white chunks and Cadbury Mini Eggs
  7. Use your hands to combine and do not over mix
  8. Make 8-12 cookie balls but do not overly squish your dough
  9. For the ultimate thickness, put your cookies in the freezer for an hour (this will ensure they stay thick and do not spread)
  10. Arrange cookies on a baking sheet, about 3 inches apart. Bake cookies for 18-20 minutes. The outside of the cookie should be light golden. As a rule of thumb, remove the cookies a couple of minutes before they actually look baked. If cookies look baked in the oven, they will be dry and over baked as they cool down.
  11. Let cool for 10 minutes
