Cadbury Mini Egg Chonkies
Ingredients:
- 10 tablespoons salted butter
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 1 egg
- 1 yolk
- 1 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoons salt
- 1 cup chocolate chips
- 1 cup white chocolate chips or chunks
- 1 Bag of crushed Cadbury Mini Eggs
Directions:
- In mixer, cream together butter and both brown and white sugar
- Add whole egg and mix well, then add yolk and mix well
- Add vanilla flavoring and mix
- In a seperate bowl combine dry ingredients (flour, baking powder and salt) and whisk together
- Add flour mixture to butter mixture and mix until just combined
- Remove bowl from mixer and add chocolate chips, white chunks and Cadbury Mini Eggs
- Use your hands to combine and do not over mix
- Make 8-12 cookie balls but do not overly squish your dough
- For the ultimate thickness, put your cookies in the freezer for an hour (this will ensure they stay thick and do not spread)
-
Arrange cookies on a baking sheet, about 3 inches apart. Bake cookies for 18-20 minutes. The outside of the cookie should be light golden. As a rule of thumb, remove the cookies a couple of minutes before they actually look baked. If cookies look baked in the oven, they will be dry and over baked as they cool down.
- Let cool for 10 minutes
