Lemon Curd

Lemon Curd

Ingredients:

  • 4 large egg yolks
  • 2/3 cup granulated sugar
  • 1 Tablespoon lemon zest (about 1 lemon)
  • 1/3 cup fresh lemon juice (about 2–3 lemons)
  • 1/8 teaspoon salt
  • 6 Tablespoons salted butter softened to room temperature and cut into 6 pieces

Directions:

  1. Fill the bottom pot of your double boiler with 2 inches of water and boil. Once boiling, turn down your heat to a simmer.
  2. Add the yolks, sugar, lemon zest, lemon juice and salt to top of your double boiler.
  3. Whisk ingredients with a SILICONE whisk until blended together.
  4. Stir and keep stirring until the mixture is the thickness of a holandaise..usually about 10 minutes
  5. Remove from heat and add the butter
  6. Stir in butter chunks until melted
  7. Pour into an airtight container and refridgerate.
  8. Use on cookies, breads, pies and more!
