
Lemon Curd
Ingredients:
- 4 large egg yolks
- 2/3 cup granulated sugar
- 1 Tablespoon lemon zest (about 1 lemon)
- 1/3 cup fresh lemon juice (about 2–3 lemons)
- 1/8 teaspoon salt
- 6 Tablespoons salted butter softened to room temperature and cut into 6 pieces
Directions:
- Fill the bottom pot of your double boiler with 2 inches of water and boil. Once boiling, turn down your heat to a simmer.
- Add the yolks, sugar, lemon zest, lemon juice and salt to top of your double boiler.
- Whisk ingredients with a SILICONE whisk until blended together.
- Stir and keep stirring until the mixture is the thickness of a holandaise..usually about 10 minutes
- Remove from heat and add the butter
- Stir in butter chunks until melted
- Pour into an airtight container and refridgerate.
- Use on cookies, breads, pies and more!
